Our new Oyler smoker – “Big Red” – has arrived. ‘Red will be the heart of our Central Texas-style smoking operation. She’s a heritage beauty, using only hardwood and live fire. Our veteran Pit Master, Mark Gabrick will be fine tuning the pit and smoking his 18 hour USDA Prime Brisket daily down on State Street. His secret? Simply prime-grade beef, wood and time.
