It’s not only because we get to meet new friends who come to try our brand of Texas-meets-Florida ‘cue… many for the first time… but also because it’s a great opportunity to sample dishes from our own restaurant neighbors!

Brick’s menu for Savor Sarasota follows below, but before you check that out, we’d like to take this opportunity to officially introduce you to the culinary face of Brick’s Smoked Meats, our Concept Chef Fernando Sanchez. Many people refer to the launch of their career as a “calling,” which was certainly the case for Chef Fernando.

Born in Puerto Rico, Chef Fernando Sánchez as a young child moved to Sebring, Florida.

From experience gained while working at the Seminole Hard Rock Casino in Tampa, FL,  Chef Fernando entered the culinary world with interest, enthusiasm, and under a great management team that cultivated his appreciation for the artistry and quickly noticed Fernando’s talent and worth ethic.  He was soon offered the opportunity to open and operate the VIP Plum Lounge as a Showroom Chef, which he notes was the experience solidifying his “calling.” Every day he worked harder, experimenting with diverse cuisines, creating daily menus and feature dishes, while working side-by-side with Chef Christopher Wang, who would become his mentor and a great friend.

After 6 years at the Hard Rock, an exciting opportunity arrived as Chef Fernando was offered the Executive Sous Chef position at Emerald Greens Country Club in Tampa, FL, where he continued to learn and expand his culinary and management knowledge.  After a move to New York to take over as Executive Sous Chef at Albany Golf and Country Club, four years later, Fernando’s career scope evolved when he became Executive Chef at Café le Perche, fine dining with a classic French influence in New York’s Hudson Valley.

Fate would have it he and his wife would later return home to Tampa Bay, which eventually led Chef Fernando to Brick’s Smoked Meats. Now Brick’s Concept Chef, Chef Fernando has helmed the culinary and the pit teams since December 2018. His mission at Brick’s remains consistent with our founder’s original vision:  to reinterpret time-honored Texas barbecue traditions and other favorites from the Ranch and from the Coast, with added chophouse flair for Sarasota diners.

A local fan favorite voted Best New Restaurant and Best Barbecue, Brick’s has become well-known regionally for its inspired approach to barbecue:  pairing ‘cue with cocktails, flavor with fun, and SRQ style with Texas tradition.
